Making the Pancakes
- In a large bowl, whisk together the flour, baking powder, sugar, salt, and shredded coconut until well combined.
- In another bowl, mix the coconut milk, eggs, melted butter, and vanilla extract until the mixture is smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just mixed.
- Heat a non-stick pan over medium heat. Pour about ¼ cup of batter for each pancake and cook until bubbles form, about 3-4 minutes.
- Flip and cook until golden brown, another 2-3 minutes.
Preparing the Drizzle
- In a small bowl, whisk together the coconut cream, powdered sugar, and vanilla extract until smooth.
Serving
- Stack pancakes on a plate, drizzle generously with the coconut cream mixture, and enjoy!
