Preparation
- Preheat your oven to 425°F (220°C).
- Arrange the cubed sweet potatoes and sliced red onion on a sheet pan. Drizzle with olive oil, then sprinkle with smoked paprika, salt, and black pepper. Toss everything together until well-coated.
- Roast for 15 minutes.
- Add the sliced smoked sausage to the pan. Toss everything together and return it to the oven to roast for another 10–15 minutes.
- Whisk together the honey, minced garlic, soy sauce, olive oil, and apple cider vinegar to create the sauce.
- Pour the honey garlic sauce over the roasted sausage and sweet potatoes and roast for an additional 3–5 minutes.
- Garnish with chopped parsley before serving.
