How to Make Roasted Sweet Potato Rounds with Honey & Feta
- Preheat your oven to 400°F (200°C).
- Carefully slice the sweet potatoes into even rounds, about ¼ inch thick.
- In a large bowl, combine the sweet potato rounds with olive oil, salt, and black pepper. Toss until evenly coated.
- Spread the sweet potato rounds in a single layer on a baking sheet. Roast for 25-30 minutes, or until tender and golden brown, flipping halfway through.
- Once roasted, drizzle with honey and sprinkle crumbled feta cheese on top while still warm.
- Finish with fresh thyme leaves and serve warm.
