  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Heavy whipping cream
Pecan Layer
  • 1 cup Chopped pecans
  • ½ cup Brown sugar
  • ¼ cup Corn syrup
  • 2 large Large eggs
  • 2 tablespoon Unsalted butter
  • ¼ teaspoon Salt

Equipment

  • mixing bowl
  • saucepan
  • pie dish

Method

Preparation
  1. Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl. Mix until well combined, then press the mixture firmly into the bottom of your pie dish. Chill in the refrigerator for about 30 minutes.
  2. In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. This should take about 2 minutes on medium speed.
  3. In a separate bowl, whip the heavy cream until it forms stiff peaks. Be careful not to over-whip; it should be light and fluffy!
  4. Gently fold the whipped cream into the cream cheese mixture. This creates a wonderfully airy filling that makes the pie rich yet light.
  5. Spoon the cream mixture over the chilled crust, spreading it evenly to create a luscious layer. Cover and refrigerate for at least 2 hours while you prepare the topping.
  6. In a saucepan over medium heat, combine brown sugar, corn syrup, butter, and salt. Stir until the mixture is smooth and bubbling, about 3-4 minutes.
  7. Remove the saucepan from the heat and whisk in the eggs, mixing until well combined. Stir in the chopped pecans to infuse that delightful nutty flavor.
  8. Allow the pecan mixture to cool for about 10 minutes before spreading it over the cream layer in your pie. Return the pie to the refrigerator and chill for at least 4 hours before serving.
  9. Optional: Top slices with whipped cream for an extra touch of luxury.

Notes

Ensure your cream cheese is fully softened to avoid lumps in the filling. Use a chilled bowl when whipping the cream for better results. Lastly, allow the pecan topping to cool slightly before pouring it over the cream layer.
