How to Make Mushroom Shallot & Herbed Goat Cheese Tarts
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
  2. Heat olive oil and butter in a skillet over medium heat. Add the sliced shallots and mushrooms, cooking until golden and fragrant—about 8-10 minutes.
  3. Combine goat cheese with fresh thyme and parsley in a mixing bowl.
  4. Spread the goat cheese mixture evenly over the prepared puff pastry.
  5. Top the cheese with the sautéed mushroom and shallot mixture.
  6. Bake in the oven for 18-22 minutes, or until the pastry is puffed and golden brown.
