Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • 1 cup Unsalted butter (softened) at room temperature
  • 1 cup Creamy peanut butter
  • ¾ cup Brown sugar (packed)
  • ¾ cup Granulated sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
For the Filling
  • ½ cup Unsalted butter (softened)
  • ½ cup Creamy peanut butter
  • 2 cups Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Milk or cream adjust as needed

Method
 

Cookie Preparation
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Whisk together the flour, baking soda, and salt in a bowl until well combined.
  3. Cream the softened butter, peanut butter, and both sugars together until light and fluffy, about 3-5 minutes.
  4. Add the egg and vanilla extract, mixing until fully incorporated.
  5. Mix in the dry ingredients until a soft dough forms, being careful not to overmix.
  6. Shape the dough into peanut-like ovals, placing them on the prepared baking sheet.
  7. Press crisscross marks into each cookie with a fork.
  8. Bake for 10–12 minutes until the edges are light golden brown.
  9. Cool the cookies completely on a wire rack before proceeding to the filling.
  10. Beat the filling ingredients together until smooth and creamy.
  11. Sandwich each cookie with a generous dollop of filling, gently pressing them together.
