- Preheat your oven to 400°F (205°C).
- Caramelize the onions in butter and olive oil. In a large skillet, melt the butter with olive oil over medium heat, then add the thinly sliced onions. Stir occasionally for about 15-20 minutes.
- Add garlic and thyme. Once your onions are caramelized, toss in the minced garlic and fresh thyme. Cook for 2-3 minutes.
- Deglaze the pan with beef (or vegetable) broth. Pour in the broth and scrape up any brown bits stuck to the pan.
- Stir in the heavy cream and let it simmer on low for about 5 minutes until thickened.
- Add the gnocchi and season with salt and black pepper, mixing until combined.
- Transfer the mixture to a greased baking dish.
- Top with Gruyère cheese.
- Bake for 20-25 minutes until bubbly and golden.
