Method
 

Directions
  1. Preheat your oven to 400°F (205°C).
  2. Caramelize the onions in butter and olive oil. In a large skillet, melt the butter with olive oil over medium heat, then add the thinly sliced onions. Stir occasionally for about 15-20 minutes.
  3. Add garlic and thyme. Once your onions are caramelized, toss in the minced garlic and fresh thyme. Cook for 2-3 minutes.
  4. Deglaze the pan with beef (or vegetable) broth. Pour in the broth and scrape up any brown bits stuck to the pan.
  5. Stir in the heavy cream and let it simmer on low for about 5 minutes until thickened.
  6. Add the gnocchi and season with salt and black pepper, mixing until combined.
  7. Transfer the mixture to a greased baking dish.
  8. Top with Gruyère cheese.
  9. Bake for 20-25 minutes until bubbly and golden.
